This recipe is a bit of a variation to the traditional Greek Spinach and Rice recipe that is made with lemon juice. Instead of lemon juice, this version is made with tomato sauce. My Greek sister-in-law shared this recipe with me. This recipe is a companion to my blog post about how to grow spinach in your home garden.
Greek Spinach and Rice
Tasty spinach and rice side dish.
- 1 cup Rice
- 6 ounces Tomato sauce
- 20 ounces Fresh spinach
- 1/3 cup Olive oil (extra virgin)
- 1/2 Onion
- 2 cups Water
Wash and dry spinach. Remove any tough stems.
Dice onion.
Heat oil in a 4 quart pan and saute onion.
Add spinach, 1/3 at a time, and saute until all of the spinach has been incorporated.
Add tomato sauce and 2 cups of water. Bring to a boil and simmer for 10 minutes.
Add rice and bring to a boil. Simmer for 20-25 minutes.
Serve and enjoy!
