Greek Spinach and Rice Recipe

This recipe is a bit of a variation to the traditional Greek Spinach and Rice recipe that is made with lemon juice. Instead of lemon juice, this version is made with tomato sauce. My Greek sister-in-law shared this recipe with me. This recipe is a companion to my blog post about how to grow spinach in your home garden

Greek Spinach and Rice

Tasty spinach and rice side dish.

  • 1 cup Rice
  • 6 ounces Tomato sauce
  • 20 ounces Fresh spinach
  • 1/3 cup Olive oil (extra virgin)
  • 1/2 Onion
  • 2 cups Water
  1. Wash and dry spinach. Remove any tough stems.



  2. Dice onion.

  3. Heat oil in a 4 quart pan and saute onion.



  4. Add spinach, 1/3 at a time, and saute until all of the spinach has been incorporated.



  5. Add tomato sauce and 2 cups of water. Bring to a boil and simmer for 10 minutes.



  6. Add rice and bring to a boil. Simmer for 20-25 minutes.

  7. Serve and enjoy!
