Guacamole is an avocado-based dip that has its roots in Aztec culture. After having guacamole prepared table side in a Mexican restaurant, I became a fan. Below you will find my guacamole recipe (the more cilantro, the better). GUACAMOLE
- 2 ripe avocados (Outside skin should be dark in color and somewhat soft when squeezed)
- 1 lime
- 1 medium tomato diced
- ½ of a small red onion diced
- 1 clove of garlic minced
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
- Cut around the perimeter of both avocados and twist in opposite directions to pull apart.
- Remove the large seed.

Using a sharp knife, make cuts in both directions around the inside half of each avocado. Take a spoon and go around the sides and scoop out the avocado into a bowl. Perform this process on all four halves.

Mash the avocado with a fork and squeeze the lime over the avocado.

Add the diced tomato.

Add the diced red onion.

Add the minced garlic.

Add the fresh cilantro.
- Mix all ingredients together and salt and pepper to taste.
- Let sit in the refrigerator for 30 minutes prior to serving.

Serve with your favorite tortilla chips and enjoy!
