GUACAMOLE

Ingredients
  

  • 2 ripe avocados Outside skin should be dark in color and somewhat soft when squeezed
  • 1 lime
  • 1 medium tomato diced
  • ½ of a small red onion diced
  • 1 clove of garlic minced
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions
 

  • Cut around the perimeter of both avocados and twist in opposite directions to pull apart.
  • Remove the large seed.
  • Using a sharp knife, make cuts in both directions around the inside half of each avocado. Take a spoon and go around the sides and scoop out the avocado into a bowl. Perform this process on all four halves.
  • Mash the avocado with a fork and squeeze the lime over the avocado.
  • Add the diced tomato.
  • Add the diced red onion.
  • Add the minced garlic.
  • Add the fresh cilantro.
  • Mix all ingredients together and salt and pepper to taste.
  • Let sit in the refrigerator for 30 minutes prior to serving.
  • Serve with your favorite tortilla chips and enjoy!
